We offer various kinds of seasonally available tofu. You can find the best tofu for eating it chilled or simmered, or even making a tofu hamberger.

Kyoto is a favorite city for tourists, and it’s not only because of its ancient cultural heritage. Kyoto has been changing and growing into a modern and advanced city, with a lot of creative ideas to combine the old with the new and add to its appeal. Kyotofu Fujino shops and restaurants are located in Kyoto’s historic neighborhoods.
We both set trends and respect the traditional side of Kyoto cuisine.
Tofu is made of selected fine soybeans, fresh water and a coagulant called “nigari.” Washed and ground soybeans are boiled overnight, and broth is pressed to separate soymilk from “okara,” the lees left after making tofu. Then, nigari is added to curdle soymilk, followed by a weight to dehydrate the curd. Each block of tofu is packed and kept cold through the whole way to reach you.
Tofu is easy to digest. High in protein and calcium, and low in calories and fat, tofu is an ideal food. Because it has no cholesterol, tofu even offers protection against diseases such as diabetes.
We use only domestically-grown soybeans and stress the importance of utilizing every aspect of the bean in order to minimize waste. In maintaining its environmentally conscious philosophy, we emphasize the importance of using non-genetically modified soybeans.

TOFU

YUBA
A thin film which covers the surface of soymilk when gently heated. Good to eat plain sashimi style with wasabi or warmed in shabu-shabu.
AGE (deep-fried tofu)
Tofu is thin-sliced, cut into cubes, or mixed with veggies to make ball-shape, and then carefully deep-fried by our professionals.
SOYMILK
Made of domestically-grown soybeans, our additive-free soymilk has been chosen by many customers. Simply drink regularly, or use in cooking as substitute for cow milk.
SOYBEAN CONFECTIONARY
These are white chocolate-covered blackbeans in pretty Japanese paper boxes. (Package illustrations change seasonally.) You can find fine souvenir gifts from Kyoto.
SOYMILK BAUMKUCHEN
You can find several soymilk desserts good for special gifts or your afternoon treats. Some of the soy products and desserts need to be refrigerated.

We offer you some afternoon treats using soymilk soft serve. Light ice cream with rich soymilk flavor. Special flavor is available on weekends and holidays. Soymilk soft ice cream contains dairy products.

Each guest is requested to order one course menu per person, except vegan / vegetarian guests who can order only individual dishes. We use dashi (fish broth) in many dishes in the course menu.

SOYMILK SOFT SERVE & SOYMILK DOUGHNUTS
They quickly became our signature food when first introduced more than 20 years ago. Fujino must be one of the pioneers of making soymilk and tofu desserts. We also are the first ones to offer some quick snacks in the Nishiki market place.
